If you use a French Press it will bring out all of the flavors of the coffee. Ethiopian will almost smell like Blueberry Jam and carry that flavor. Colombian will be fully bodied and smooth. If you're using a drip filter the hot water pulls the unwanted flavors from the paper too. A stainless steel french press is the purest way to go with no foreign flavors contaminating your coffee.

Thanks... Yes some say that it should not come to a boil. But to make things easy you can bring it to a boil and then take it off the heat for a couple minutes. Then your water will be just right. It would be to complicated if you had to stand there and watch your water temperature. 212 is boiling, you want it a few degrees cooler. I doubt the formaldehyde is in sufficient quantities to cause any trouble. If it were, don't you think more coffee drinkers would have cancer? A bleached filter has less "papery" flavor than an unbleached filter, and is therefore superior.

The water temperature also matters. That would probably be acceptable with a bunn or a cuisinart, they get the water hot enough, but most automatics don't. the other thing is that a chemex is about 1/5 the price of a good bunn coffee maker.

This is merely a different way to brew coffee that produces a different cup of coffee. I do use a french press and when I brew in the chemex I use unbleached filter papers.

Yeah, I look back on these early videos and realize I did quite a few things wrong. I have much better technique now, as well as better equipment (burr grinder FTW!), and I roast my own beans. This is great advice though and thank you for posting this, it will help others down the road.

This is poor technique. That's way too much water for a bloom; there should be practically no water dripping through. You must avoid pouring around the sides of the filter and never disturb the bed of coffee. You should also pour much more deliberately and slowly, making an effort in between to maintain a 195°-200°f temperature ?a thermometer is your friend. To each his or her own, but if you'd truly like to get everything you can out of this method take more care than this.

Your brewing temp is dropping below the ideal while you're waiting between pours. This could encourage bitter or "dirty" tasting coffee. Also, you're getting DIOXIN and FORMALDEHYDE dissolutes through that bleached paper filter. At least use an unbleached filter, or better yet, use a french press or vacuum pot. You'll have a more uniform brewing temps, and you'll brew your java more efficiently with better flavor preservation.

Hey @BrickSh0t7 that is a great vid and quite informative and detailed loved it. One thing that I noticed and thing you actually mentioned it, for this type of coffee method I would like my coffee ground a little bit more fine (just a wee bit) than what you had. And a suggestion if you would like to move up the geek level you should try the "vaccum pot" that is really geeky :-). Thank you for the video.

The thing is coffee goes COLD! and the taste coffee is particulary bitter I find. so I use french press instead. I am wondering you don't mind cold coffee?? I mean absolutely positively coffee isn't warm enough to drink. What do you reckon?
