Respond to this video... If there is less than 2 cm of water left in the down part then you have to take it of the heat because the glass can crack. That's also why some cheap models(don't know if this one goes in that category) have to thin glass that taking a cold towel to speed up the process of the coffee going down could lead to a crack. I know at least it won't do for the Hario or Cona tabletop vacuum brewers.

@ranier202 The coffee I used was some Kenya AA coffee and I think that this method as well as the filter method might be most suited to coffee from Africa or maybe the Mocha Java blend and some other coffees with more body and less acidity would be better for French press. Well I don't have a favorite method just like each to go with different coffees.

@ranier202 And the reason for not putting coffee in until all the water has pushed up is because some water will escape before it reach the ultimate temperature that should be around 195-200°F. I still have to see if a longer steeping time and/or a tad coarser coffee will be better.

@ranier202 Bodum instructions says that you should use coarse ground coffee but I got mine today and I used grind like for filter drip with good result just a tiny bit grounds in the last few drops but no mud like with French press. I used water that I already boiled and not until the water was all up(except 2 cm) I put the coffee in,stirred and put the lid on to let it steep for one minute. The whole process for half a pot(0.5 liter)took like 5 minute(less than in a French press).

Great contraption! The other day I actually saw a chef making a fishbroth this way. A nice selection of fish, shrimp, ginger, lemongrass and chives where placed in the upper bowl. After ten minutes, his guests had a tremendous fishsoup! Nice video!

@jib1000 If he was only putting in enough coffee in the top pot for the water that will reach the top, than yes. However, you put in enough coffee for how much water is being used. If you were to drink just the coffee from the top it would be much stronger than the mixture in the bottom.

accualy if you look close you can see the first part of the water coming into the grounds about 1:50. so it is about a 7 min brew. plus they did no stiring and mintioned nothing of it, there are many ways to use a siphon brewer. more ways to make bad coffee then there are to make good, but good vac pot coffee is far better then any other brew method. save espresso (if properly done, which is even more rare)

@Jitenshadesu Well, if you pay attention to the video, you can see that the water starts going up around 4.30 and the coffee is ready (meaning back down in the bottom globe) around 9.30, which according to my calculations means that the water spends in the ground about 5 minutes altogether. The first four and half minutes goes for heating the water.

If the coffee is steeping for more than 5 minutes, YOU ARE DOING IT WRONG :D seriously though, this would kill good coffee. A solid brew goes 4:30 - 5 min for a complete cycle on my yama 5(US)-cup w/ cory rod.

That really depends on how you dose the coffee grounds. It's bit different than in drip coffee, but not too much. The water spends some time in upper globe, so it gets to steep longer than in drip coffee. It's also good idea to make little experimenting in the beginning to find the right amount of coffee grounds that work for you with this kind of coffee maker.

You are probably using too fine grounds, that's likely the reason, they jam the filter. Try coarser grounds. Let us know, if it helped.

I have tried 300ml and 20g of coffee with my 3 hole but mine takes nearly 4 minutes to drain, why is this? The grind is paper filter grind which is what I asked for when I bought the coffee(I don't own a grinder yet). Should I go for a slightly coarser grind next time?

Interesting. I do the lake method myself and get great results. But I dearly would love to replace my years old plastic cone(s) with a ceramic one. I have never seen one for sale. I've seen cone and carafe setups in some indepents here in Toronto, but that's it. To the extent that I can, I will avoid plastic, if it's plastic that comes into contact with hot water or food.

Good video! Also - check out the video on French pressing by CoffeeGeek. He spoons off as much of the grounds off of the top before plunging. I would think that would take the hurry off of finishing the pot because the grounds wouldn't be left at the bottom to continue steeping.

Nice vid, spot on about the course grounds or you'll get very bitter coffee. You guys should also try Mate, comes from the leaves of the Yerba Mate tree in Central America. A great alternative if you like the buzz from coffee but find it too harsh on the old tummy. The caffein buzz is a lot gentler than what you get from coffee. It is however an acquired taste! (just read that yearba mate is a spices of holly - thanks wikipedia)

Is there any way to not get a bunch of mud at the bottom of your cup or will it just always be that way? I find even with my burr grinder on the coarsest possible grind I still get a decent amount of sediment at the bottom of my cup. agitation? as long as it all gets wet and sooner than later and the grounds do not float too soon it is fine. temp control? next time you do a batch, leave the thermometer in when you dump in the grounds. Odds are you'll never break the glass since it is small and has had a chance to cool off and even out at around 180 degrees maybe (a guess) and your wet towel is probably not cold but just moist and thus a good conductor of heat.

@oxenpaul This is an old video, but regardless, you don't know what you're talking about. If you place the grounds in the top before the water rises, you have an uncontrolled agitation and it takes away your temperature variable control, one of the best things about syphon! Also, as someone who makes many syphons a week using a wet towel, I can tell you there is no risk with Hario's superior glass.

This should be flagged as dangerous, and unnecessarily so. If the grounds are in the top to begin with they'll get a proper brew time without risking boiling the bottom dry. The wet towel risks thermally shocking the bottom vessel even if it is pyrex. You have added extra complexity to a simple process. A wet towel is unlikely to burn, thank goodness. The wisking is nice but if the coffee is in from the start it is less necessary and you can usually get a proper stir from the upwelling.

The Yama pots stand a chance of breaking. The glass quality is poorer, hence the much cheaper price. The grind is related to how much you dose but you want a controlled/repeatable ~30 second draw down so adjust grind to fit. The towel makes that possible and it just isn't possible with larger vac pots over the 3 cup size.

Why should you only use the towel method on the pyrex hario brewers? Can it be done on the yama products? And how finely did you grind?
